Breakfasts can be a challenge without eggs and bacon, but there are several healthy alternatives and vegan breakfast recipes that can provide you the energy and nutrients to start the day off. Here are some easy vegan recipes and tips that you can whip up on your kitchen.

Overnight Parfait on Mason Jars

Overnight mason jar breakfasts are a growing trend in the healthy lifestyle sections. You can prepare these the night or a day before and store them on your fridge, and just grab these next morning for a fuss-free breakfast.

You’ll need oats, almond or soy milk, chia seeds and maple syrup. Add this layer by layer on your mason jar and top it with slices of fruit. Blueberries, strawberries, mango, melons, peaches, kiwi – be creative with your combinations.

Continental Vegan Breakfast

Ready for a hearty vegan breakfast? Continental breakfast menus for vegetarians can be composed of the following:

· Vegan sausage – Buy packs from your local organic grocery store and fry these with vegetable oil or buy whole foods online.

· Slices of fruit – Pineapple, mangoes, bananas, strawberries, there’s no restrictions on this.

· Eggless scrambled tofu

· Rye bread toast with pineapple or fruit jam

· Muffins – banana and blueberry versions that were baked without eggs.

· Cereal, oatmeal or porridge

Many people like to have eggs for breakfast, but as a vegan you’ll be using egg substitutes or no-egg versions of recipes.

Eggless Scramble

The secret to this is the thin slices of tofu. Some also call this recipe as Tofu scramble and it can resemble the look of scrambles eggs. You’ll need the following:

1 blocked of firm tofu – drained, pressed and then sliced into inch cubes

1 White onion diced

Half green and red pepper, diced

Garlic powder

1 teaspoon soy sauce

Optional ingredients

Sliced tomatoes

Bits of vegan meat

Sautee the sliced and crumbled tofu, onion, pepper and tomatoes, and add a pinch of garlic powder. Stir continuously until cooked for about 5 minutes. Serve this with your continental breakfast plate or with some salsa and tortillas.

Vegan Pancakes

This is a great alternative for classic breakfasts and can also be used in making vegan waffles. And no egg substitutes! You can mix in blueberries, strawberries and other fruits with this recipe.

Let a tablespoon of flaxseed thicken with 2-3 tablespoons of cold water. Mix this together about one cup of soya milk and a teaspoon of apple cider vinegar and some coconut oil. Combine this with 150g of flour, 1 teaspoon baking powder and half teaspoon bicarbonate soda. Mix and fold until the lumps are gone, and then add the fruits. Then fry the mixture on a pan with heated vegetable oil. Serve with maple or agave syrup.
